Nutty Quinoa Salad

This is another version of a quinoa salad that we found in The New Basics Cookbook by Rosso & Luskin. Similar to the other quinoa salad that we published. We also tried it with red quinoa which was a bit more nutty in flavor and also very good.
1 C quinoa
2 cups water
1/2 C golden raisins
1/4 c sesame oil
3 scallions sliced
1/2 C unsalted peanuts
1/2 c madarin oranges drained
2 tablespoons fresh mint
2 teaspoons orange zest
Combine the quinoa and water ina large saucepan, and bring to a boil. Reduce heat, cover and simmer for 10 minutes. Add raisins and continue cooking until water is evaporated, 5 minutes. Remove the pan and spread mixture on a baking sheet to cool.
In a large bowl combine the cooled quinoa with the rremaining ingredients. Serve. Makes 4 to 6 portions.
